Old, brown, mushy bananas! What are they good for?

While rummaging around the kitchen looking for a snack, I came across the above mentioned formerly yellow things, and happened to ask that very question to my dear wife. To make a long story short, “banana bread” became my first ever introduction to baking. (Me! I never thought it was possible!)

Now, where does any normal human being go for advice these days on anything new? The internet, of course! Thus, I started my search. Before long, GOOGLE presented me with several options. Being a basic, no nonsense type of guy, I wanted a recipe that was straight forward, easy to follow (I didn’t want to take any chances with anything fancy!), and that could be accomplished with the use of one mixing bowl. Also, I wanted to make enough of “it” to make the effort worth while. (I didn’t plan to do this “baking thing” again anytime too soon!)

Well, as luck would have it, I found the very recipe that I was looking for.

 May I present: Banana Bread for the Baking Challenged

7 old, brown, mushy bananas (mashed)
2/3 cup melted butter
½ cup sugar (the recipe called for 2 cups, but my wife nixed that as being “too sweet”)
2 eggs, beaten
2 teaspoons vanilla
2 teaspoons baking soda
2 pinches of salt (How much is a pinch?)
3 cups of flour
2/3 cups chopped/crushed walnuts

 Let's start

Preheat the oven to 350 degrees F. With a wooden spoon, mix the butter into the mashed bananas in a large mixing bowl. (That’s the fun part!)
Add the crushed walnuts, and then mix in the sugar, eggs, and vanilla.
Sprinkle the baking soda and salt over the mixture and mix in.
Add the flour last.
Pour the mixture into two lightly buttered 4x8 inch loaf pans.
Bake for 1 hour and 15-30 minutes. (Until a tooth pick jabbed into the middle, comes out “clean”.)
Cool for 15 minutes, then remove from the pans and cool further on a wire rack for one hour.

So how did it go? What were the critiques from my family?

By the way, did you know that you can freeze old, brown, mushy bananas (up to 7) in their skins in a plastic bag until ready to “prepare”? (My gosh, did I really say that? Did I really give a baking tip?)
